Coleslaw
Note: This high-calorie recipe is especially for kids with cystic fibrosis (CF), who need additional calories to meet their nutritional needs.
You'll never want coleslaw any other way after trying this recipe. This dish is wonderful for a party or picnic, and the leftovers taste even better the following day. Remember to store the leftovers in the refrigerator and serve chilled.
Prep time: 1 hour, 15 minutes (including chilling time)
Ingredients:
- 12 slices cooked bacon, crumbled
- 4½ c. shredded cabbage
- ¾ c. coleslaw dressing
- 1/3 c. blue cheese
- 1 tomato, diced
Utensils:
- mixing bowl
- mixing spoon
- measuring cups
- knife (you'll need help from your adult assistant)
Directions:
- Combine all ingredients in a large bowl.
- Mix well.
- Refrigerate for approximately 1 hour and serve chilled.
Serves: 8
Serving size: ¾ cup
